What could be more perfect than a tasty snack to celebrate the new Spring season? We’re giving Karyans a new, healthy recipe with these delicious Lemon Bars! They’re gluten-free, dairy-free, and extremely tasty! We know you’re not going to want to miss the chance for some delectable lemony-goodness so let’s get started!

This snack will require 15 minutes of prep time and 25 minutes of cook time. For crust ingredients, you’ll need:

  • ¼ cup melted and cooled coconut oil
  • ¼ cup coconut sugar (or 2-3 tablespoons of honey or maple syrup as substitutes)
  • 1 egg
  • 1 cup almond flour
  • ¼ teaspoon almond extract
  • 3 tablespoons coconut flour
  • ¼ teaspoon of salt

And for filling, you’ll need:

  • Zest from 1 lemon
  • ½ cup freshly squeezed lemon juice
  • ½ cup of honey
  • 4 large eggs
  • 1 egg yolk
  • 1 tablespoon coconut flour

Sounds like a lot? Don’t worry, it’s easier than you think! Let’s get started.

Preheat your oven to 325 degrees F. Line an 8×8 inch non-glass baking pan with paper. 

We have to work on your crust first! In a medium bowl, add in the coconut oil, coconut sugar, egg, and almond extract. Mix it all up together until it’s smooth. Then add in your almond flour, coconut flour, and salt! Mix it up again until dough forms. Press your dough evenly into a prepared pan with your hands. Then you can go ahead and bake for 10 minutes before removing your completed crust from the oven to cool. Ideally, 

While you’re baking your crust, you’re going to want to get your filling going. In a medium bowl, whisk together your lemon zest, lemon juice, honey, eggs, egg yolk, and coconut flour. Once your crust has finished cooling, pour the filling mixture over the crust. Then bake it all together for 18 to 25 minutes, or at least until the filling is set.

Once complete, you need to focus on making sure it’s all firm enough to make bars! Cool everything completely on a wire rack and then refrigerate for at least 4 hours. 

Then you’ll be ready to serve! Carefully use a sharp knife to cut into 12 solid bars. You can even garnish them with powdered sugar and a twinge of lemon zest before serving.
