You’ll need: 1 Tbls butter, 1 Tbls extra-virgin olive oil, 1 medium onion (chopped), 1 stalk celery (chopped), 2 cloves garlic (chopped), 1 tsp chopped fresh thyme or parsley, 5 cups chopped carrots, 2 cups water, 4 cups reduced-sodium chicken broth, “no-chicken” broth, or vegetable broth, 1 tsp salt, and freshly ground pepper.
-First, heat butter and oil in a Dutch oven over medium heat until the butter is good and melted. Then add in your onion and celery. Cook, stirring occasionally until softened for 4 to 6 minutes.
-Add garlic and thyme (or parsley); cook and stir until fragrant for about 10 seconds.
