Black Bean Soup

Is there really anything better? This is the perfect dish on cold days, as well as a great source of protein! You’ll fall in love with its excellent tang and spices for sure! Without further ado, let’s get started!

YOU’LL NEED: 1 Tsp olive oil, 1 white onion (chopped), 3 cloves garlic (minced), 1 1/2 tablespoons chili powder, 2 teaspoons cumin, 1 teaspoon dried oregano, 1/8 teaspoon cayenne pepper, freshly ground black pepper, 3-15 ounce cans organic black beans, 1-15 ounce can organic tomato sauce, 3/4 water or vegetable broth.

STEP 1: Heat your olive oil in a large pot over medium heat. Once your oil is good and hot, add in your onions and garlic, stirring frequently for 3-5 minutes or until your onions are translucent.

STEP 2: Add in your spices. This includes your chili powder, cumin, oregano, cayenne pepper, and black pepper. Stir for about 30 seconds and then add in your black beans, tomato sauce, and water. Be sure to not drain the black beans so as to add a nice thickness to your soup!

STEP 3: Bring your soup to a boil before reducing heat and simmering uncovered for about 25 minutes.

STEP 4: Get ready to taste! You can add a pinch of salt if desired. This should consist of about 4 servings in total. Enjoy!
