YOU’LL NEED: 1/3 cup chunky peanut butter, 1/4 cup 68% vegetable oil spread, 1/4 cup honey, 1 cup rice and wheat cereal flakes, 1 cup bran flakes, 1/3 cup finely snipped dried apples, 2 teaspoon apple pie spice, 2 ounces white baking chocolate, 1/4 teaspoon shortening.
STEP 1: In a medium saucepan, combine your peanut butter, vegetable oil spread, and honey.
STEP 2: Cook and stir your mixture over medium heat until your mixture comes to a boil. Then, remove it from heat and stir in your cereals, apples, peanuts, and apple pie spice until it’s well mixed.
STEP 3: Transfer your mixture to a small bowl before covering and chilling for 30 minutes. Then, using moist hands, form your mixture into 1-inch balls by gently pressing your mixture together.
STEP 4: Let the balls stand firm on a waxed paper-lined baking sheet for about 15 minutes.
STEP 5: In a small saucepan, combine white chocolate and shortening. Cook and stir your mixture over low heat until it’s melted. Then, drizzle the balls with melted white chocolate. Cover and chill for at least 15 minutes. You can then store them, covered, in a refrigerator.
