Spring Pea Pasta

What better way to celebrate the upcoming Spring season with healthy spring peas? For all you pasta-lovers out there, this healthy dish is the perfect meal for a cozy night in! Let’s get started! 

INGREDIENTS: 1 pound of pasta, 3-4 cups fresh peas, 5 scallions (thinly sliced), 1 shallot (very finely diced), 1 cup chopped fresh mint, 1 cup chopped parsley, ½ cup olive oil, 2 lemons (zest and 1/ cup juice), 2 cups fresh pea shoots, 1 teaspoon salt, ½ teaspoon white pepper, 1 tablespoon truffle oil, (OPTIONAL) goat cheese. 

STEP 1: Boil your pasta in a generous amount of salted water. This will help tenderize and add flavor to your meal.  

STEP 2: While the pasta is cooking, start prepping the rest of your ingredients. Chop up your scallions, shallots, and assorted herbs. Zest two lemons and measure out about ¼ cup lemon juice. 

STEP 3: Once your pasta is done, add the peas to the boiling pasta water and blanch for about one minute, or until it’s nice and bright green. Immediately drain, place pasta and peas in a large bowl, drizzle with olive oil, lemon juice, and season with 1 tsp salt and ½ tsp pepper. 

STEP 4: Toss in the pea shoots and add the scallions, shallot, herbs, and lemon zest. Stir. 

STEP 5: Drizzle your mixture with truffle oil and serve immediately.
